Coconut Chicken with Pineapple Corn Salsa

I came across this meal when I had the chance to enjoy the leftovers of it from my aunt a couple weeks ago. It was so good that I had to make it myself! So, last night I got in the kitchen and went for it. Man oh MAN is it good :)

So first, I like to gather every ingredient I need for my meal and take a pretty picture! :)



Here I have the chicken ready to become one with the egg, coconut and cornflakes!




Then into the oven it goes!


While the chicken cooks, I made the salsa


Then voila! A meal fit for any king!!!


At the end, I drizzled some honey on top of the chicken and OH MY! Life changer let me tell you...


RECIPE
  • 3/4 cup unsweetened coconut flakes
  • 3/4 cup crushed cornflakes
  • 1 egg, beaten
  • 1 pound of chicken breast or tenderloins (your preference)
  • 1 can of corn
  • 1 chopped scallion
  • 1 red bell pepper
  • 1 cup of pineapple
  • 1 lime
  • 1 tablespoon of extra virgin olive oil
  • Salt
  • Pepper
  • Honey
DIRECTIONS

  • Preheat oven to 425
  • In one bowl, crack egg and beat
  • In another bowl, combine coconut flakes, corn flakes and salt and pepper
  • Rinse chicken: Dip first in egg and then in coconut and cornflake mix
  • Place chicken in greased oven safe dish, and place in oven. Cook for 20 minutes or until cooked all the way through
  • Combine corn, scallion, bell pepper, pineapple, lime juice, oil, and some salt and pepper in bowl
  • Once, chicken is complete and served, drizzle some honey on the top for a little added sweetness and moisture
I served this meal with rice, but do whatever works for you! Hope you enjoy!
